Why I Love this Recipe

I love making scones, whether they're my famous 3 ingredients lemonade scones, or these gorgeous savoury scones, scones are a perfect idea for any occasion. These cheese and chive scones are no exception.

These were an absolute hit in the office this week, so if you're a savoury fan, these are the scones for you.

And guess what, they're really easy to make too!

You can easily whip up a batch before your occasion, and they taste absolutely gorgeous straight out of the oven slathered in butter!

Recipe Ingredients

This savoury scone recipe is super simple and quick to make. You'll require the following ingredients;

Self-raising flour - self raising flour is used a lot more in Australian baking than American baking. To make your own SR flour, add 2 teaspoons of baking powder for every 1 cup of plain flour.

Sugar - to add a touch of sweetness

Salted Butter - colder than room temperature, cut into cubes. You will need to be able to rub the butter into the flour.

Milk - whole milk is fine, and you will need a little extra to brush on the top.

Fresh Chives - about 2 tablespoons of chopped chives.

Cheese - this recipe calls for two types of cheeses - tasty cheese (cheddar) and parmesan.

What Equipment Do I Need?

You'll also need a few of the following handy utensils and kitchen tools.

  • a large bowl for mixing the savoury scone dough
  • a stainless steel knife to cut or mix the dough
  • 1 mason jar or similar sized cookie cutter to shape your dough
  • 38x22cm rectangular baking dish or dish big enough to fit 12 scones in.

How to Make this Recipe

To make these scones, you'll need to complete the following steps.

  1. Place flour, sugar, salt and pepper in a large bowl.
  2. Add the butter and use your fingertips to rub the butter into the flour until it resembled bread crumbs. This usually takes between 8-10 minutes.
  3. Make a small well in the middle of the flour, and add in the chives, cheese and use a knife to mix the dough together. To do this, you almost want to 'cut' the dough until it's well combined.
  4. Next pour the dough onto a floured surface and knead until combined.
  5. Then shape the dough into a round disc measuring around 4cm/2inches in height.
  6. Use your mason jar to cut out scones - this should make between 12-13.
  7. Place your scones on your baking dish lined with paper, then bake for 15-20 minutes.

Tips & Tricks for Success

How Do I Know When My Scones are Cooked?

To make sure your scones are cooked, you'll need to do the old tap test. Scones should be lightly browned on top, and sound hollow when you tap them.

My oven is relatively uneven so the scones in the front cooked quicker than the scones at the back, so I had to rotate the dish halfway through and had to cook them a touch longer than the other side.

Keep checking them through the cooking process, but ideally the colour should be a golden brown on top.

What happens if my dough is too wet?

Your dough should be wet enough that you can work it without getting it stuck to your hands too much.

If your dough is too wet, add a little more flour - about a tablespoon at a time until its workable again.

What Should I Serve My Scones With?'

These are best served heated or straight from the oven with a generous lathering of butter.

They go beautifully with a soup for the winter as well.

How Do I Store my scones?

These can be stored in an air-tight container for a day or so, to serve, reheat in the microwave for 10-15 seconds until they're warmed.

Ingredients

  • 3 ½ cups self raising flour
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 65/2.2 g/oz butter cubed
  • 1 ½ cups milk
  • 3 tablespoon fresh chives
  • cup parmesan cheese finely grated
  • cup cheddar cheese finely grated
  • extra cheese and milk for top

Instructions

  • Preheat oven to 200C/400F

  • Line your large baking tray with parchment paper.

  • Add the flour, salt, pepper and sugar to a large bowl and stir.

  • Add the cubed butter, and use your fingertips to rub the butter into the flour until it resembles breadcrumbs. This should take around 8-10 minutes.

  • Make a well in the centre of the flour, then add in the milk, cheese and chives.

  • Use a knife to 'cut' the mixture, combining it together well.

  • Dust a clean surface with flour, then turn out the dough to knead. Continue to add flour if the dough gets too sticky.

  • Shape the dough into a disc measuring a height of 4cm/2 inches. Dip your mason jar or cookie cutter into flour, then cut out round discs of dough.

  • Place the dough discs in your prepared baking tray. It doesn't matter if they touch. You should make around 12 scones.

  • Place in oven and bake for 15-20 minutes, checking every so often to ensure they're cooking evenly.

  • Remove from oven and serve immediately with butter.
