I tried out many different versions of this vegan cookie dough recipe! I wanted it to be:

  • refined sugar-free,
  • vegan,
  • gluten-free
  • low-cal
  • but also tasting like the real thing!

So, our cookie base is canned chickpeas! Sounds crazy, but bear with me! This will taste like cookie dough in the end, not like a chickpea dip!

Think of the chickpeas as a plain canvas. This time, it’s not hummus we want, it’s cookie dough. So time for some bold flavors.

  • The chilling time is crucial as it really enhances the texture of the edible vegan cookie dough since the coconut cream and nut butter have a chance to really firm up and make the cookie dough thicker.
  • I like using coconut cream in this recipe, as it lends a certain creaminess to the vegan cookie dough. Coconut cream comes in cans. Alternatively, you can refrigerate a can of coconut milk and scoop off the solid cream that gathers on top.

Ingredients

  • 6datespitted and soaked in warm water for 30 minutes
  • 400gchickpeasrinsed and drained
  • 1tbspvanilla extract
  • 1pinchsalt
  • 2tspstevia powderor Truvia
  • 1 1/2tspcinnamon
  • 2tbspcoconut cream or coconut milk
  • 1tbspnut butterI like sunflower seed or hazelnut butter
  • 1/2cupdark chocolate chipsvegan and sugar-free, if possible

for Peanut Butter Cookie Dough:

  • 20gpeanut butter powderoptional
  • 1tbsppeanut butter instead of nut butter

Instructions

  1. Take dates out of soaking liquid and put into your blender. Blitz into a smooth paste and add all other ingredients apart from the chocolate chips. Blend until smooth.

  2. Transfer cookie dough into a bowl and stir in the chocolate chips. Chill for about 2 hours covered with cling film and enjoy!
