Jamie Oliver posted this simple homemade bread recipe for the millions of people who are currently locked down for Covid-19.

We all know that bread is hard to find or you can’t get to the store to get it but there is nothing that lifts the soul like the smell of fresh bread baking. If you can, grab some flour or hunt in the cupboards and have a go. Great to do with the kids as well!

The Recipe

Ingredients

  • 650ml tepid water (from a boiled kettle and allow to cool so you can touch and it doesn’t feel “hot” or cold – just warm)
  • 1 Sachet of dried yeast
  • 1 kg Strong bread flour
  • Pinch of salt

Method

  • Pour the water into a bowl and add the dried yeast
  • Mix up the yeast with the water (if you’d like, activate the yeast by adding a pinch of sugar now)
  • Leave the mixture for a couple of minutes to see the mixture start bubbling
  • Add most of the kilo of flour into the water and mix with a fork
  • Add your pinch of salt
  • Mix with your hands and begin to knead the dough – if your hands get sticky, flour your hands
  • Keep mixing until the dough comes out in a ball
  • Dust the surface and knead the dough by stretching it and moving it around
  • Dust the dough and put into a ball, then put back into a bowl, cover, and leave for 1.5 hours to rise
  • Knock back the dough by punching it, let it fall, then knead the dough again to remove all the bubbles.
  • Split the dough into two (this batch makes two loaves)
  • Dust flour onto a baking tray, knead your half dough into your shape and leave on your tray
  • Leave to prove for half an hour to double in size
  • Cook in a hot oven, at 180 degrees C for 35 minutes.
