ingredients

3 pounds chicken pieces
2 packages Italian salad dressing mix
3 tablespoons flour
2 teaspoons salt
1/4 cup lemon juice
1 1/2 cup pancake mix
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
milk

directions

Make a paste out of the Italian dressing mix, flour, salt and lemon juice. Coat chicken evenly. Stack chicken pieces in a bowl. Cover and refrigerate overnight or at least for several hours.

Mix pancake mix with paprika, salt and pepper. Dip chicken pieces in milk, then in pancake coating. Dust off excess. Lightly brown in large skillet containing 1/2" vegetable oil. Brown for 4 minutes on each side. Remove and place in a single layer on shallow baking pan. Seal with foil.

Bake for 1 hour at 350 degrees F. Uncover and baste again with milk. Return, uncovered, to oven heated to 400 degrees F, to crisp for 10 minutes.

    Ok, not so much like KFC but this is a good recipe. I've used other fried chicken recipes where you use pancake mix to fry it and they usually work well. This one has some added seasonings that make it taste a little better than some I've tried.

    I worked at kfc for many years in the 80s. you would bet 40 lb bag of flour and you added the seasoning packet and salt to the flour and blended it in. As for the Gravy, we originally used "cracklings" deposited in the bottom of the fryer to make the gravy. Eventually It went to powder only. Just like we made biscuits from scratch, and now they are frozen.

    I also worked in a KFC and all I can say is that if you want authentic tasting chicken, to and add an Italian seasong blend to some flour and work from there, because without all the MSG thats packed into those 11 famous herbs and spices, anything you make is not going to taste the same. And as to the above comment about the gravy, EVERY KFC I have ever worked at has used the drippings from the chicken to make the gravy. So good luck making that! Anyway, hope someone can find a way to make chicken that tastes the same without all the MSG and other not so good for you spices. Because with enough MSG dog food would be a tasty treat.

    as to the above comment..... I also used to work for KFC about 6 years ago... #1, the 11 herbs and spices that season the chicken, come pre-mixed in the flour, #2, i believe (and this is one i wouldnt swear to, since i wasnt a cook) but i believe the let the chicken sit in cool water, till it get's dipped int the flour mixture!!! and #3 this ont i am more than 100% positive on, about the gravy remark!! the gravy come in a little paper envelope, in a powder form, that we mixed with hot water!!!

    I used to work for KFC many years back. The only thing then was a pressure fryer at 350 degrees for 13 minutes.The ingredients were chicken pieces and the flour. There was never eggs, tomato sauce, italian dressing or any other weird ingredient.My advice would be to try finely ground italian herbs, salt, pepper, cinnamon (very small amount) nutmeg (very small amount) and probably a very small amount some horrible powdered gravy mix. That's all.They used to use the 'finings' from the fryers to make the gravy, so there's probably a clue there.....Happy trial and error to you all......
